Spruce tip Ice Cream

At the Pallas Hotel, we treated ourselves to spruce tip ice cream (kuusenkerkkäjäätelö in Finnish). It is a unique, seasonal delicacy in Finland that highlights the bright, citrusy, and woodsy flavor of young spruce shoots. It is part of a broader Finnish culinary trend of using forest ingredients in, and sometimes on, desserts.
